Emerging Extraction Technologies in Olive Oil

  • Can physical technologies improve olive oil extraction process efficiency?
  • The olive oil industry has been operating for centuries, but in the last decades, significant attention has gone to the development of physical technologies that enhance the traditional extra virgin olive oil (EVOO) extraction process efficiency. Studies have validated such technologies at industrial scale in medium-sized olive oil factories.
  • How is virgin olive oil extracted?
  • Virgin olive oil (VOO) and extra virgin olive oil (EVOO) are mainly obtained using mechanical methods. Figure 1 shows the flow chart of a typical process for the manufacture of virgin olive oil. Overall, the extraction process is semi-continuous process due to the batch-like and non-uniform malaxation stage, explained further below.
  • Where is extra virgin olive oil produced?
  • Most of the extra virgin olive oil is produced by extraction plants located in Europe, even though olive oil production is increasing in North Africa, Turkey and other Middle Eastern countries, Oceania, North and South America, and China.
  • Do tubular heat exchangers affect olive oil extraction process?
  • In recent years, the introduction of tubular heat exchangers has been studied experimentally during the olive oil extraction process, in order to evaluate its influence on the process rapidity of as well as the yield and olive oil quality ( Esposto et al., 2013, Leong et al., 2015; Veneziani et al., 2015 ).
