  • Canola oil usually contains around 7% saturated fatty acids, 6–14% ALA, and 50–65% OA. Cold pressed canola oil, on the other hand, has a greater concentration of tocopherols (60–70 mg/100 g) and phytosterols. In general, canola oil has a 1:2 ratio of a-tocopherols to g-tocopherols, and a 1:1 ratio of free to esterified phytosterols.
