Exploring the quality and safety issues in the coconut oil processing

  • How did coconut processing work?
  • Processors who worked full time, from the production of coconut milk to the boiling of the oil, shared the profits accrued from the oil production with the coconut farmer or trader. This was after the cost of production, including transportation of the coconut meat, cost of water and cost of coconut milling had been paid for.
  • Should Ghana invest in coconut processing?
  • On the basis of the findings, the study recommends that the government of Ghana, through the Ministry of Trade and Industry should consider investing in the processing of coconuts in the Municipality under the One District-One Factory project to employ the local people.
  • When did the coconut plant start in Ghana?
  • The coconut plant was introduced in the south-western region of Ghana in the 1920s by a British forestry manager. Following the expansion of the cultivation of the coconut plant, a processing factory was built and managed by civil servants in the 1950s under a public policy (Ruf et al., 2010).
  • What is a coconut processing business?
  • The study considered processors as those actors, mostly men, who were engaged by coconut farmers or VCO traders to harvest and process coconuts into oil. Some of these were wage labourers. Thus, the processing business is similar to coconut farming which is male-dominated.
